Rename Documentation: Releases and versioning page

The current Documentation: Releases and versioning page should be renamed to Documentation: Releases and versioning schema , as it is describing the schema for the release and versioning methodology. There is already a separate documentation page that lists all of the releases: Valkey Releases.
