Sniffer not working with Docker-CE 8.0

This is more of a FYI.  Lots of changes to networking in the Docker-8.0.  As a result the qeeqbox/honetpots sniffer isn't picking up port scans through the docker port forwards.  Reverting to docker-27.5 works around the issue.

For Redhat Derivatives

sudo dnf downgrade docker-ce-3:27.5.1-1.el9
sudo dnf install python3-dnf-plugin-versionlock
sudo dnf versionlock add docker-ce
```
