Add tracing documentation for Keto & Oathkeeper

We have documentation on tracing for Ory Hydra: https://www.ory.sh/hydra/docs/guides/tracing/

Goal:
Create a document in /ecosystem describing all relevant tracing information for all Ory projects.

The info from Hydra should be transferable to the other projects as well!

if we need this documented for keto and oathkeeper as well, best track it in a dedicated issue.

The motivation for this automation is to help prioritize issues in the backlog and not ignore, reject, or belittle anyone.

If this issue was marked as stale erroneously you can exempt it by adding the backlog label, assigning someone, or setting a milestone for it.
