Emojis are not rendered in the gitbook ui as of recently when updates to the github-based markdown are made, see e.g. here (mardown source here).
No changes were made to the emoji part. Manually re-adding them via the gitbook editor as below (which causes an annoying empty commit) fixes it. But next time one changes the github source, emojis disappear again on gitbbook.
